In the last lesson you mapped out a weekly prep session: what to cook, in what order, and how to package it. All of that work only pays off if the food is still safe when you eat it. This lesson gives you the numbers and habits behind that promise: the temperature danger zone, the two-hour rule, safe cooling and reheating, and realistic fridge and freezer limits.

By the end you can:

- Name the temperature danger zone and explain why it matters
- Apply the two-hour rule to cooked food and shopping trips
- Cool and reheat batch food in safe, simple steps
- Set fridge and freezer limits, and know what goes where
- Spot the five common habits that quietly spoil a good prep session

> **Note:**
> Everything here follows widely used home food safety guidance (the kind you see from public health food agencies). The core idea is boring but powerful: keep food out of the warm middle zone, and keep it there for as short a time as possible.

## The Danger Zone: 4 °C to 60 °C (40 °F to 140 °F)

Bacteria that make you sick multiply fastest in the warm middle range. Outside that range they slow down a lot: cold slows them, heat near boiling kills many of them.

| Zone | Temperature | What happens |
| --- | --- | --- |
| Cold | Below 4 °C (40 °F) | Growth is very slow |
| **Danger zone** | **4 °C to 60 °C (40 °F to 140 °F)** | **Fastest growth** |
| Hot | Above 60 °C (140 °F) | Growth is largely stopped |

Two ideas follow from this table.

1. **Don't park food in the middle.** A pot of stew sitting on the counter is a warm, moist incubator.
2. **Pass through the middle quickly.** Cooling and reheating are about moving fast from hot to cold, or cold to hot, not about lingering.
